Our pickled cucumbers are the perfect ingredient to make this quick tartare sauce. It's a great way of using the pickling liquid, which can also be used to make a delicious burger sauce (recipe for that coming soon!). Ideal with fish and chips or in a fish finger butty!
3 tbsp mayonnaise
4 slices of pickled cucumbers, roughly chopped
2 tsp capers, roughly chopped
3 tsp of pickling liquid (from the pickled cucumbers)
juice of 1/2 lemon
1 tsp freshly chopped parsley
salt & pepper to taste
1. In a bowl mix together the mayonnaise, pickled cucumbers and capers (I think to a chunky tartare sauce but if you want to chop the cucumbers and capers more finely, do so).
2. Then squeeze in the lemon juice and add the pickling liquid and salt & pepper. Taste and add more of anything if you think it needs it. Finish by adding the freshly chopped parsely and keep covered in the fridge until needed.
Serve with fish and chips or perfect in a fish finger sandwich!
