for the pastry:
250g plain flour
125g butter cubed
1/4 tsp salt
2 eggs yolks
1 tbsp water
for the filling:
1 jar Mincemeat
1. First, make the pastry, add all of the ingredients except the egg yolks into a food processor and blitz until the mixture looks like breadcrumbs. Add the yolks and 1 tbsp of cold water and whizz again until the mixture forms into a ball. You can add more water if it doesn't come together. Wrap in cling film and leave in the fridge to chill for 30 minutes.
2. Preheat the oven to 200 degrees C/gas mark 6. Grease a x12 cupcake tray to help prevent the pastry from sticking.
3. Remove the pastry from the fridge and roll out onto a floured surface. Then using a biscuit cutter cut 12 rounds of pastry. Then cut 12 tops (we used a star cutter). Place a round pastry in each cup and fill with a teaspoon of mincemeat and place the pastry tops over the mincemeat.
4. Bake in the oven for 15 minutes until the pastry is golden brown.
